How to Make It

Heat the oven and line a large sheet pan with foil. Whisk the olive oil, maple syrup, Dijon mustard, garlic, thyme, salt and pepper into a glaze. Toss the sweet potatoes and red onion with half the glaze and spread them on the pan. Rub the chicken thighs with the rest of the glaze and nestle them in among the vegetables. Roast until the chicken reaches 165°F and the sweet potatoes are caramelized at the edges.

Tips for the Best Maple Dijon Sheet Pan Chicken

  • Line the pan. Lining the sheet pan with foil makes cleanup a breeze.
  • Split the glaze. Use half on the veggies and half on the chicken.
  • Nestle the chicken. Tuck the thighs right in among the vegetables.
  • Use a thermometer. The chicken is done at 165°F.
