Bacon-Wrapped Green Bean Bundles

Y’all, these Bacon-Wrapped Green Bean Bundles are the side dish that steals the whole holiday dinner! 🥓 Crisp-tender green beans bundled up in smoky bacon with a little brown sugar caramelization on top.

The green beans get a quick 3-minute blanch and an ice bath so they stay bright green, then a toss with olive oil, garlic powder, salt and pepper. Then you gather them into little bundles, wrap each one with a half-slice of bacon, sprinkle on brown sugar, and roast until the bacon is browned and crisp.

It makes 12 bundles, and they look so pretty on a platter. They’re perfect for Thanksgiving, Christmas dinner, or any time you want green beans that everybody actually reaches for.

Why You’ll Love It

  • Bacon makes everything better. Smoky, salty bacon wrapped around every bundle.
  • Sweet and savory. A little brown sugar caramelizes on top.
  • Holiday-pretty. These look fancy on the table with very little effort.
  • Bright, crisp-tender beans. Blanching keeps them green and snappy.
  • Portioned. Twelve bundles, so serving is easy.

Ingredients You’ll Need

  • Fresh green beans: 1 1/2 lbs, trimmed.
  • Thin-cut bacon: Six slices, halved crosswise to make 12 half-slices. Thin-cut crisps up better.
  • Olive oil: To coat the beans.
  • Garlic powder, salt and black pepper: Simple seasoning.
  • Brown sugar: Sprinkled on top for that caramelized finish.

You’ll find the exact amounts and steps in the printable recipe card below.

How to Make It

Heat the oven and line a rimmed baking sheet with foil. Blanch the green beans in boiling salted water for a few minutes, then plunge them into ice water, drain, and pat them dry. Toss the beans with olive oil, garlic powder, salt and pepper. Now the fun part: gather 8 to 10 beans into a little bundle, wrap a half-slice of bacon around the middle, and hold it with a toothpick. Line up all 12 bundles on the baking sheet, sprinkle them with brown sugar, and roast, flipping them halfway, until the bacon is browned and crisp. Pull out the toothpicks and serve them hot.

Tips for the Best Bacon-Wrapped Green Bean Bundles

  • Shock them in ice water. Plunging the blanched beans into ice water stops the cooking and keeps them bright green. Pat them dry well.
  • Use toothpicks. Secure each bacon wrap with a toothpick so the bundles hold together, and remove them before serving.
  • Line the pan with foil. Lining the baking sheet with foil makes cleanup so much easier.
  • Flip halfway. Turn the bundles halfway through the 20 to 25 minute roast so the bacon gets browned and crisp all over.

Are green beans only good if bacon’s involved? Be honest! 😄
