Bacon-Wrapped Green Bean Bundles

Crisp-tender green beans bundled up in smoky bacon with a little brown sugar caramelization. The side dish that steals the whole holiday dinner!
Servings: 12 bundles
Course: Side Dish

Ingredients

  • 1 1/2 lbs fresh green beans trimmed
  • 6 slices thin-cut bacon halved crosswise (12 half-slices)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp brown sugar

Equipment

  • Large pot
  • Rimmed baking sheet
  • Foil
  • Toothpicks

Method

  1. Preheat oven to 400°F. Line a rimmed baking sheet with foil.
  2. Bring a large pot of salted water to a boil. Blanch the green beans 3 minutes until bright green and just tender-crisp. Drain and immediately plunge into a bowl of ice water; drain again and pat dry.
  3. In a large bowl, toss the blanched green beans with the olive oil, garlic powder, salt, and black pepper.
  4. Gather 8–10 green beans into a small bundle. Wrap one half-slice of bacon around the middle of the bundle and secure with a toothpick. Repeat to make 12 bundles and arrange them on the prepared baking sheet.
  5. Sprinkle the brown sugar evenly over the bundles.
  6. Roast 20–25 minutes, flipping the bundles halfway through, until the bacon is browned and crisp. Remove the toothpicks and serve hot.

Notes

Remove the toothpicks before serving.
