How to Make It

Pat the chicken dry and season it with salt, pepper and Italian seasoning. Sear it in olive oil in a large skillet until it’s golden and cooked through, then move it to a plate. In the same skillet, cook the garlic for a few seconds and pour in the chicken broth, scraping up the browned bits. Stir in the heavy cream and Parmesan and let it simmer until it thickens a little. Stir in the spinach until it wilts, put the chicken back in, spoon the sauce over the top, and garnish with parsley. Serve it over pasta or rice.

Tips for the Best Creamy Garlic Parmesan Chicken

  • Pat the chicken dry. Dry chicken browns better.
  • Check the temperature. Cook the chicken to 165°F.
  • Scrape up the browned bits. They add so much flavor to the sauce.
  • Don’t rush the sauce. Let it simmer a couple of minutes until it thickens slightly.
  • Pick your side. Pasta or rice both soak up the sauce.
