How to Make It

Cut the pie crusts into 3.5-inch circles and press them into a greased muffin tin. Whisk the pumpkin, sweetened condensed milk, eggs and pumpkin pie spice until smooth, and fill each crust about 3/4 full. Bake them hot at first, then turn the oven down and keep baking until the filling is set.

Tips for the Best Mini Pumpkin Pies

  • Grease the tin. It helps the little pies pop out.
  • Whisk until smooth. No lumps in the filling.
  • Fill 3/4 full. So they don’t spill over.
  • Two temperatures. Start hot, then turn the oven down.
  • Bake until set. The centers should be set, not jiggly.
